As food editors, we're constantly looking for smart ways to shave time off of recipe prep. At the same time, we never want to ask you to use an obscure gadget that you don't already own. Striking a balance between efficiency and practicality is something we think about daily in the test kitchen.
For months, we turned to our stand mixer every time we needed to mix cake batter, make cookie dough, beat egg whites, whip heavy cream, etc. But as much as we love our Kitchen Aid stand mixer, it is very large and very heavy, and sometimes we need something more convenient (and compact).

If you had a less powerful hand mixer back in the day, you may remember thinking it accomplished little more than you could do with, well, your hands. But this beauty has 10 speeds, so it's just as powerful as your trusty stand mixer. The best part? It has a count-up timer, so if a recipe asks you to "beat until smooth and fluffy, about 2 minutes," you'll know just how long you've been mixing. It also comes with dough hook attachments, so you can even make yeast breads with ease.
Another perk, which is not to be underestimated, is that it's quiet. Want to wake up early and bake dad banana bread for Father's Day? This mixer won't wake him up and ruin the surprise. Needless to say, we're on board with a hand mixer, and think it's a worthy investment for any kitchen.
