Here’s the Grilled Cheese Sandwich You’ve Never Made Before (and It’s Epic)
A new 5-minute cooking technique makes this comfort food favorite even more gooey and delicious.
There are so many ways to build a decadent grilled cheese sandwich. But what about the times you just want a straight up, simple one? The cheese melted just right and that buttery golden sear on the bread. Forget the debates around shredded vs. sliced cheese, or mayo vs. butter on the outside for color. This new technique results in a crispy, melty, golden grilled cheese in less than five minutes. No softened butter required.
The secret to this technique is melting the cheese on the bread, open-faced, under the broiler. That way, when it hits the hot butter in the skillet it’s strictly for getting that golden, crispy exterior. No worrying if the cheese is finally melted inside. Another exciting bit is that yellow American cheese does a beautiful thing under the intense heat of the broiler—it browns in spots for an extra dimension of flavor you didn’t know you wanted. Note: Cheddar cheese packs a great flavor punch but it won’t brown like sliced American does.
This is how you do it:
Preheat the broiler with rack in highest position and line a baking sheet with foil. Place two slices of bread on prepared sheet and place two slices of cheese on each slice (use American for a classic diner approach). Broil until cheese is brown in spots, about 1 minute (but keep a close eye on it as broilers vary greatly in intensity). Remove from oven and combine bread, cheese side to cheese-side to make a sandwich. Melt ½ tablespoon butter (salted or unsalted is fine) in a large nonstick skillet over medium-high heat. When butter is bubbling, add sandwich and cook until golden on bottom, about 1 minute. Lift sandwich with a spatula, add another ½ tablespoon butter and swirl skillet to coat, flip sandwich and cook until golden, about 1 minute more. Consume immediately. Serve with tomato soup for a match made in heaven. This recipe easily doubles if you're serving a friend (or are just really hungry).
