Okay so this recipe is AMAZING. I've made it several times however recently I didn't have enough chicken. So in a pinch I added white mushrooms and sweet corn to make up for the missing chicken. I have to say that the green chilies and the corn are magical and should be a part of this recipe. Great flavors and easy recipe to modify for what you have on hand. Always comes out great.
This is one of those dishes that is so good when you eat it, it makes you so happy it makes you dance. I know my son and he would not eat it if I put the chilies in it. So I used a small jar of chunky mild salsa. What he loves. I also paired it with creamy chicken rice. It was to die for. I plan on twisting this and trying to make this as a desert. Cheese cake, strawberry's and cream enchiladas. I believe it will be amazing.
This recipe is delicious, we loved it. I made it tonight just as the recipe is written, and it came out wonderful. I had everything to make it, except my chicken was frozen. I had never cooked chicken from a frozen state in an Instant Pot before, but I thought this would be a good time to try it. I used 7 chicken tenders and put the pot on high pressure for 12 minutes, perfect! It was such an easy way to have fresh chicken without running to the store, and it only took a couple minutes to cut it up for the recipe. These enchiladas are so rich and creamy with the cream cheese and heavy cream poured over the top, so very tasty. The whole house smells of fried cheese, or something wonderful has been cooked around here. Try this recipe, you won't be disappointed.
I have been making these for several years and they are delicious. It easily feeds 5 to 6 adults if you serve with a side salad with taco dressing and Charro Beans. I usually make a pan of these for company and everyone raves about it. To save time I normally use a roast chicken from the deli. It seems very odd that these ingredients come together to make such a great tasting dish. We actually prefer this to the red sauce version.
