It’s hard to believe that this sumptuous banana bread is vegan. The sweetness of banana, brown sugar, and vanilla are prominent while a faint sesame flavor adds a subtle nuttiness to the bread. The secret ingredients in this banana bread are coconut oil and apple cider vinegar. The coconut oil adds moisture and richness, giving the bread its characteristic consistency. The apple cider vinegar reacts with the baking soda to help the bread rise, and it makes the bread tender in the place of traditional dairy. The sesame seeds covering the top of the bread add crunch and hint at the tahini flavor within the bread. With both sweet and salty elements, this entirely plant-based banana bread has all the flavors of a classic banana bread with a few tasty additions.

How to Make It

Step 1

Preheat oven to 350°F. Grease a 9- x 5-inch loaf pan and line bottom with parchment paper.

Step 2

In a medium-sized bowl, stir together flour, baking powder, and baking soda. Set aside.

Step 3

In a separate large bowl, whisk together mashed bananas, brown sugar, melted coconut oil, tahini, vanilla, vinegar, and salt until well incorporated.

Step 4

Stir dry ingredients into banana mixture until fully combined. Pour batter into prepared loaf pan, and sprinkle surface with sesame seeds.

Step 5

Bake until a toothpick inserted into the middle of the banana bread comes out clean, 55 to 60 minutes. Allow to cool before removing from loaf pan and slicing.
