Best corn pudding I have ever made!!! Everyone and I mean everyone I have ever served this to, asks for the recipe and raves about it! Not low cal, so I make it for special events- holidays, etc!!
This has been a hit with my extended family for several years now. I make it with a couple of small modifications. To save time, I use 4 cups of frozen corn and a can of cream style corn in place of the fresh corn. I also add a 2 oz jar of diced pimentos (drained) to give it that festive harvest feel. I get multiple requests every year to make sure I am bringing this popular dish to our Thanksgiving feast.
