Stir first 3 ingredients together in a large bowl. Add sugar, baking soda, and 3 cups flour, stirring just until dry ingredients are moistened. Turn dough out onto a lightly floured surface; knead 8 to 10 times, adding up to 1/3 cup more flour to prevent dough from sticking. Roll dough to 3/4 inch thick; cut with a 2-inch round cutter.
