I have made this cake twice, once exactly as directed with the whole strawberries between the layers, and again just liberally placing sliced fresh strawberries between the layers. When made as directed with the whole berries, the cake is prettier. To be honest though, it was way better with the sliced strawberries between the layers, and still a beauty with whole berries on top for garnish. Either way it is beautiful and delicious!
OMG this cake is scrumptious! Luckily I read the other review and froze the layers, which made frosting a snap. I have to admit though, unless you have VERY ripe strawberries, pick your sharpest knife to slice the cake. Otherwise the strawberries rebel and try to stay whole. I mean, let's be honest, part of the excitement of this cake is seeing the cut strawberries as you make each slice.
I made this cake about two years ago for my Mom’s birthday and it was heavenly! My family devoured it and the flavor is like nothing you’ve ever tasted. It was easier to frost the cake by freezing them over night. Be sure and use large strawberries and cut them wide to help hold up the top cake or else it will tilt a little😋
