How to Make It
Combine 1 cup granulated sugar, 1 cup water, 6 cardamom pods, 4 (3-inch) cinnamon sticks, 3 star anise pods, 1 Tbsp. sliced fresh ginger, 1 tsp. black peppercorns, and 1/2 tsp. whole fennel seeds in a small saucepan. Bring to a boil over medium-high, stirring constantly until sugar dissolves. Reduce heat to medium, and simmer 20 minutes. Remove from heat, and cool to room temperature, about 30 minutes. Pour through a fine wire-mesh strainer, discarding solids. Store in an airtight container in refrigerator up to 2 weeks.
