This Spiced Simple Syrup is a riff on a classic simple syrup. Cardamom, cinnamon, star anise, ginger, peppercorns, and fennel seeds instill the spicy notes. Our simple syrup will take a bit more time than the classic version that only includes sugar and water but, we can assure you, your cocktails will thank you. After simmering, be sure to cool to room temperature before straining the mixture with a wire-mesh strainer. The syrup will keep in the refrigerator for up to two weeks. 1 cup granulated sugar
1 cup water
6 cardamom pods
4 (3-inch) cinnamon sticks
3 star anise pods
1 tablespoon sliced fresh ginger
1 teaspoon black peppercorns
1/2 teaspoon whole fennel seeds
How to Make It
Combine 1 cup granulated sugar, 1 cup water, 6 cardamom pods, 4 (3-inch) cinnamon sticks, 3 star anise pods, 1 Tbsp. sliced fresh ginger, 1 tsp. black peppercorns, and 1/2 tsp. whole fennel seeds in a small saucepan. Bring to a boil over medium-high, stirring constantly until sugar dissolves. Reduce heat to medium, and simmer 20 minutes. Remove from heat, and cool to room temperature, about 30 minutes. Pour through a fine wire-mesh strainer, discarding solids. Store in an airtight container in refrigerator up to 2 weeks.
