I am so upset right now! I raved to EVERYONE in my family about this dish. I've been so excited and I waited until right before time to leave for our big traditional diner. While waiting the final few moments of cook time I read the reviews. One says the recipe is wrong and the amount of sugar makes this dish way to sweet and says to use a whole cup less! I do not have time to remake the one dish I've been raving about for a month. How disappointing this is going to be. I chose Southern Livings recipients because I thought I could trust this well known brand without question. Wouldn't it have been incredibly easy for the author to fix the recipe? I am so disappointed and it's wiped the beautiful shine off of my holiday.
Recipe looks and sounds delicious... I haven't made it yet, because I am gluten-free and must substitute for Ritz crackers. There isn't a clear exchange for Ritz as they have a distinctive flavor. Can you suggest an alternative? It would be great if Southern Living could give gluten-free options on some of its recipes. It6 is so disheartening when you want to follow a recipe but know that you can't because it contains gluten!
In our family its known as “Cheesy Pineapple Casserole”, and it’s the favorite dish of our great big handsome Marine helicopter pilot. It was the first thing he wanted after each deployment. Always a staple on holidays.
Pineapple bread pudding is also a fave…for breakfast, as a side with ham or pork, and as a dessert with huge scoops of vanilla ice cream.
What size pan is used??? I made it in an 8 x 8. Loved it!!!!!!!!!!!!!!!
I just made this and it was wonderful. I used the written receipe amount of sugar but I also used fresh pineapple. The balance was perfect. This is a keeper receipe.
The written ingredient measurements do not match the accompanying video. 1 1/3 cup sugar is way too sweet! Video correctly says 1/3 cup which is perfect. Loved this recipe once I got the measurements correct.
I have very picky grown up kids who don't like pineapple, well this casserole was a hit, they all went back for seconds. This recipe is a keeper! Easy and absolutely delicious! Thank you.
I made this recipe yesterday with improvisions. Here are mine....
using 1 can of crushed pineapple in juice. I then added 1/2 of a white cake mix and spread in bottom of sprayed dish. I covered with the cheddar cheese and then the cracker/butter topping. It was really good!
