Leal Active Time: 20 mins Total Time: 1 hrs 20 mins Ingredients 1 (1/4-oz.) packet of gelatin 1/4 cup milk 1 (14-oz.) can sweetened condensed milk 1 (15-oz.) can crushed pineapple, well drained 1 cup sweetened shredded coconut, plus more to garnish 1 cup maraschino cherries, chopped, plus more to garnish 1/2 cup chopped pecans, plus more to garnish 1 tablespoon maraschino cherry juice 1/4 cup fresh lemon juice 1 1/4 cup whipped topping, plus more to garnish 1 (9-inch) graham cracker crust Directions In a small glass or metal bowl, mix together gelatin and milk. Set aside. In a large mixing bowl, stir together condensed milk, crushed pineapple, sweetened coconut, maraschino cherries, pecans, maraschino cherry juice, and lemon juice. Once well combined, fold in whipped topping until completely incorporated. Place the bowl of gelatin in a larger bowl filled with hot water. Stir gelatin mixture, making sure that none of the water gets into the gelatin. Once the gelatin has melted and the mixture is smooth, pour it into the mixture in the large mixing bowl and stir until well combined. Pour the contents of the bowl into the prepared graham cracker crust. Refrigerate for 1 hour. Remove from the refrigerator and garnish with additional whipped topping, coconut, cherries, and pecans.
