  • 3 cups all-purpose flour

  • 1 cup sugar

  • 2 1/2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 2 large eggs

  • 1 1/4 cups milk

  • 1/2 cup butter, melted

  • 1 tablespoon lemon zest


  1. Whisk together flour, sugar, baking powder, and salt in a large bowl. Whisk together eggs, milk, melted butter, and lemon zest; stir into dry ingredients just until moistened. Spoon into a lightly greased 12-cup muffin pan, filling two-thirds full. Bake at 350° for 25 to 30 minutes or until golden.
