How to Make It
Preheat oven to 415°F. Place pizza dough on a floured surface, and using a floured rolling pin, roll the dough into a circle with a 9 inch diameter. (Note: this will take several passes since pizza dough is elastic and prone to shrink back to its original shape). Use your hands to shape the circle into the shape of a heart. Use your fingers to distribute the dough into an even thickness, making a 1-inch crust around the heart that is slightly thicker than the dough in the center of the heart. The heart should be 9 inches at its widest, and 8 inches from the top center of the heart to the bottom center.
Place heart-shaped crust onto a parchment paper-lined baking sheet and brush with 1 Tbsp. olive oil. Sprinkle with salt, and bake until lightly golden brown, about 20 minutes.
While crust is baking, heat 1 Tbsp. olive oil in a small skillet. Add shallot and stir until soft and lightly browned, about 2 minutes. Set aside.
When crust is finished, spoon pizza sauce over the surface of the crust, leaving the 1-inch crust border without any sauce. Spread shallots evenly over sauce. Place bell pepper, fennel, mozzarella, and prosciutto evenly over the sauce and shallots.
Bake until cheese is just melted, 10-12 minutes. Garnish with a drizzle of olive oil and fennel fronds.
