  • Preheat oven to 415°F. Place pizza dough on a floured surface, and using a floured rolling pin, roll the dough into a circle with a 9 inch diameter. (Note: this will take several passes since pizza dough is elastic and prone to shrink back to its original shape). Use your hands to shape the circle into the shape of a heart. Use your fingers to distribute the dough into an even thickness, making a 1-inch crust around the heart that is slightly thicker than the dough in the center of the heart. The heart should be 9 inches at its widest, and 8 inches from the top center of the heart to the bottom center.

  • Place heart-shaped crust onto a parchment paper-lined baking sheet and brush with 1 Tbsp. olive oil. Sprinkle with salt, and bake until lightly golden brown, about 20 minutes.

  • While crust is baking, heat 1 Tbsp. olive oil in a small skillet. Add shallot and stir until soft and lightly browned, about 2 minutes. Set aside.

  • When crust is finished, spoon pizza sauce over the surface of the crust, leaving the 1-inch crust border without any sauce. Spread shallots evenly over sauce. Place bell pepper, fennel, mozzarella, and prosciutto evenly over the sauce and shallots.

  • Bake until cheese is just melted, 10-12 minutes. Garnish with a drizzle of olive oil and fennel fronds.
