When it comes to sweet treats, nothing is as classic (and delicious!) as a warm, ooey-gooey chocolate chip cookie. But while the dessert itself is universally loved, there are plenty of takes on the chocolatey staple that can make everyone’s favorite kind slightly different. Some prefer theirs chewier, while others delight in the nutty flavor that browned butter brings. And then there are those who think heart-healthy dark chocolate is forever greater than the milk variety. And that’s where these irresistible cacao-filled sweets come in.As far as chocolate chip cookie recipes go, this one is rather straightforward. Whipped up in little more than half an hour with ingredients you probably already have on hand, they’re a perfect anytime cookie to make as a party treat or indulgent after-school snack. As far as the chocolate goes, feel free to experiment with whatever cacao level your heart desires. And don’t be afraid to venture outside of “chip” territory: We tested these with chopped Ghirardelli dark chocolate bars and loved the flavor of a higher cacao level coupled with the itty bits of chocolate dust evenly distributed throughout.

  • Beat butter and sugars at medium speed with an electric mixer until creamy. Add eggs and vanilla, beating until blended.

  • Combine flour, soda, and salt in a small bowl; gradually add to butter mixture, beating well. Stir in morsels. Drop by tablespoonfuls onto lightly greased baking sheets.

  • Bake at 350° for 8 to 14 minutes or until desired degree of doneness. Remove to wire racks to cool completely.
