Cucumber-Basil Granita

The blend of cucumber, basil, and lime make this spiked treat super refreshing.

Ingredients

  • 4 cups seedless cucumber slices

  • 3 tablespoons fresh lime juice

  • 1/2 cup Simple Syrup

  • 1 cup fresh basil leaves

  • Pinch of salt

  • Chilled herbal gin (such as Hendricks), optional

Directions

  1. Process first 3 ingredients in a blender 20 seconds. Add basil and salt; process 20 seconds. Pour mixture into a 9- x 5-inch loaf pan. Freeze 4 to 5 hours or until ice crystals form, stirring every hour. If desired, top each serving with a shot of chilled gin.
