This is one of my family’s favorites!! I substitute baby spinach for the collards because of my husband and son. I usually omit the celery and I use bone in/skin on thighs. My son isn’t usually a fan of good ‘ol Southern chicken bog, but he loves this!! It’s a fantastic one pot meal and a great dish to fix for dinner parties or pot lucks.
Really loved this recipe. My husband said it was delicious! I did use Ben's basmati ready rice and substituted the chicken thighs for chicken breast. I also used Cajun seasoning on the chicken. Easy. Fast. Great for a cold evening.
