Cherry-Swirl Frosting

Cherry-flavored Cheerwine soda is the inspiration for this frosting, which tops our Cheerwine Cherry Cupcakes. For the pretty swirled look you see here, combine two frosting colors in one piping bag, then pipe the frosting onto the cupcakes. Here's how to do it: Divide the Cherry-Swirl Frosting evenly between 2 bowls. Stir 1 to 2 drops food coloring gel into 1 frosting bowl until incorporated. Fit a large pastry bag with a large star tip (Wilton #2110). Spoon pink-tinted frosting into half of bag; spoon untinted frosting into remaining half of bag. Pipe frosting onto cupcakes, and top each with 1 maraschino cherry.

Ingredients

  • 1 cup butter, softened

  • 6 cups powdered sugar, sifted

  • 3 tablespoons cherry soft drink (such as Cheerwine)

  • 1/4 teaspoon salt

  • 1 to 3 teaspoons whole milk, as needed

Directions

  1. Beat butter with a heavy-duty stand mixer fitted with a paddle attachment on medium speed until creamy, about 2 minutes. Gradually add sugar, soft drink, and salt, beating until blended, about 3 minutes. Beat in milk, 1/2 teaspoon at a time, until desired consistency is reached.
