How to Make It
Thinly slice 1 lb. trimmed Brussels sprouts using a mandolin or food processor fitted with the slicer attachment.
Transfer sliced Brussels sprouts to a large bowl. Add 2 tablespoons sugar and 1 tablespoon salt; toss to coat. Let stand 15 minutes.
Add bonito flakes; toss. Let stand 10 minutes. Add mayonnaise, lime juice, pepper, carrots, beets, and radishes. Let stand 5 minutes to allow the Brussels sprouts to wilt slightly and the flavors to marry. Top with pomegranate.
