It’s no secret that Southern folks enjoy deep fried, unhealthy food, so it's always a good idea to put a little something light on the table to offset other overly filling foods. Fear not, though. This broccoli salad recipe does have bacon, so it's bursting with flavor. Crunchy cauliflower, creamy Cheddar cheese, and flavorful red onions, make this dish a true shining star.

The best part is... it’s so easy to make! If you know how to boil water and mix iingredients together, then you know how to make this simple cold salad. This recipe keeps well in the refridgerator and it’s an exclent side dish option because it pairs beautifully with a varity of Southern food. With only 9 ingredients (most of which are probably already in your kitchen), there’s no reason not to give it a try.

How to Make It

Step 1

Cook bacon in a large skillet over medium-high heat 10 to 12 minutes or until crisp; remove bacon, and drain on paper towels. Crumble bacon.

Step 2

Cook broccoli and cauliflower in boiling salted water to cover 2 minutes or until crisp-tender; drain. Plunge into ice water to stop the cooking process; drain well. Place cauliflower and broccoli in a large bowl. Add cheese, carrot, and onion.

Step 3

Stir together mayonnaise, sugar, and vinegar. Pour over cauliflower mixture; toss to coat. Top with bacon. Cover and chill 1 to 8 hours.
