This recipe creates moist, flavorful, not overly sweet muffins. I made them again today with two small modifications. Instead of dicing the apples, I grated them on the large holes of my grater. This resulted in a finer crumb and did not affect the batter’s moisture. Also, before baking, I sprinkled the tops with sanding sugar because, why not?! Actually, the sanding sugar offers an additional crunch factor. I highly recommend this recipe!
The recipe was easy to follow and the muffins were scrumptious! I made them Christmas morning before anyone woke up; perfect start to our day. The 5 of us easily finished them off and I’m making another batch this morning.
Note: I used 2 gala apples because we didn’t have Fuji. It was still great.
I made this in a 9 inch round cake pan. It started to crack and break when I flipped it onto a cooling rack. I would suggest to leave in the cake pan and serve from there. I also drizzled a glaze on top after it cooled. The cake was delicious and made the house smell so good. It was very moist. Definately would make again.
