This sweet and salty popcorn is the perfect springtime treat for everything from Easter egg hunts and Easter dessert ideas to hostess gifts presented in a beautiful tin with bright spring ribbon. It’s also a really fun goodie bag idea for children’s birthday parties! 

This recipe is eye-catching and appears timely, but it only takes a few minutes, and it’s especially fun to prepare with the entire family - especially kids! All you have to do is spread popcorn on a sheet pan, melt white chocolate chips, create your favorite pastel shades using food coloring, and drizzle the entire pan of popcorn before hardening everything in the fridge for just a few minutes.

Pastel Poprcorn

Ingredients

  • 1 (4.8-oz. bag) popped popcorn (such as Angie's Boom Chicka Pop) (about 18 cups)

  • 1 (12-oz. bag) white chocolate chips

  • 1 Tbsp. coconut oil

  • Liquid food coloring (yellow, pink, blue, green, purple)

  • 2 tsp. nonpareils

  • 1 tsp. flaky salt

Directions

  1. Pour out popcorn:

    Line a baking sheet with parchment paper. Spread popcorn on prepared baking sheet in a single layer.

  2. Melt white chocolate:

    Add white chocolate chips and coconut oil to a medium microwave-safe bowl. Microwave on MEDIUM (50% power) in 30-second increments, stirring in between, until completely melted, about 2 minutes.

  3. Add food coloring to white chocolate:

    Evenly divide melted chocolate into 5 small bowls. Place 2-3 drops of each color in a bowl to form pastel shades of yellow, pink, blue, green, and purple.

    When adding food coloring to white chocolate, be careful to not add too much, or the chocolate can seize (become hard and grainy). A drop or two should be plenty.

  4. Drizzle chocolate and sprinkles:

    Drizzle pastel chocolate over popcorn from darkest to lightest shade: purple, blue, pink, green, yellow. Immediately sprinkle with nonpareils and flaky salt.

  5. Let chocolate harden:

    Chill popcorn, uncovered, until white chocolate is hardened, about 10-20 minutes. When firm, break apart popcorn, transfer to a bowl, and serve. Store leftover popcorn in an airtight container at room temperature for up to 1 week.
