Coat an 11 x 7–inch baking dish with cooking spray. Whisk together cider and cornstarch and set aside. Combine apples, sugar, lemon juice, 1 teaspoon cinnamon, and salt in a large skillet over medium heat; cook, stirring occasionally, until apples release liquid and start to soften, 5 to 6 minutes. Stir in cider mixture; cook until thickened and glossy, 2 to 3 minutes. Pour apple mixture into prepared baking dish. Combine butter and remaining ¼ teaspoon cinnamon in a medium bowl; add crushed crackers and toss to combine. Sprinkle cheese over apple mixture; sprinkle cracker mixture over cheese.
