Yesterday evening, I had a craving for cookies. With only one mushy banana, a cup or so of Bob's Red Mill Old Fashioned Rolled Oats, and a bag of chocolate chips on hand, an all-out baking extravaganza wasn't looking too promising. Did I mention I was also using my oven to heat up a burrito for dinner?
A few cabinets later, I found one of my most underrated tools in my kitchen arsenal buried in the very, very back of a high shelf: My quarter-sheet pan. Also known as a jelly roll pan, these pans are a touch bigger than a standard sheet of printer paper. I quickly scooped my six tablespoon-sized makeshift cookies on and tossed the slim pan in my oven, alongside Mexican leftovers and all.
Cleaning this small silver sheet pan is a cinch, and it's a must-have when you're cooking multiple dishes in the oven at once and don't have room for more than one or two full-sized sheet pans.

The New York Times agrees. "Measuring approximately 9 by 12 inches, it’s the helpful little sibling of your standard-size sheet pans," writes A Good Appetite columnist Melissa Clark in a recent article. "I can fit four in my oven all at once, which makes them highly flexible when you want to cook several things at the same time. Then I can toss them into the dishwasher, where they scarcely take up more room than my plates." (Try throwing four full-sized sheet pans into your dishwasher.)
