Bring on the berries.

It's hard to argue with a pavlova. A layer of crispy meringue, fresh whipped cream, plenty of fresh fruit — remind us why we aren't serving these more often?

Thankfully, Ina Garten brought the airy, creamy, crunchy treat back into our consciousness with a recent blog post, boldly titled "My Favorite Summer Dessert!"

"One of my favorite summer desserts is Mixed Berry Pavlova. It’s a light and summery concoction of marshmallowy meringue, whipped cream, and lots of berries tossed with fresh raspberry sauce," the Barefoot Contessa wrote. "It’s such a crowd-pleaser, and I love that I can make all the parts in advance and then assemble it just before serving."

Her rendition of the warm-weather hit comes together with a few popular ingredients and pantry staples (eggs, sugar, salt, cornstarch, white wine vinegar, vanilla extract), a generous smothering of sweetened whipped cream, and a final drizzle of her "triple raspberry sauce," made with raspberries, sugar, seedless raspberry jam, and framboise liqueur. Since us Southern folk always have to tinker with something, our one tweak would be to grab a few sprigs of fresh mint leaves from the garden for garnish. Okay, just one more tiny edit: Pick extra mint and muddle any leftover into a mint julep and serve.
