There's no denying it: Silicone baking mats (sometimes called a Silpat thanks to the popular brand that makes them) are a kitchen hero. When you work in an industrial or restaurant kitchen, you learn firsthand what a waste of time and money parchment paper and aluminum foil are for everyday baking needs.

One day, you hear the sous chef or pastry chef lecturing an intern on the simple brilliance of a silicone baking mat, and you decide to test-drive one for yourself at home. One batch of brown butter chocolate chip cookies or Mamaw's sugar cookies later, you will be hooked. These non-stick surfaces can withstand high heat and freezing temps, and can do a lot more than simply aid in a cookie baking spree (though they're essential for that, too.)

We love using silicone baking mats for roasting vegetables, freezing melted chocolate into a homemade topping in the freezer, and even cooking a pizza. Need to roll out some dough? Skip the messy countertop process or gunking up a cutting board and use your silicone baking mat as you marvel at the fact that yes, nothing sticks.

That's why we weren't surprised when we saw that the AmazonBasics Silicone Baking Mat ($9.62 for a 2-pack) was the best-selling product in Amazon's bakeware department today. Each mat is roughly 11.6 x 16.5 inches and blissfully requires no cooking spray, vegetable oil, or parchment paper for use. Quick, y'all, place a double order before they sell out.
