Variants of this cake have existed in Europe since Medieval times, but American settlers created the inverted, glazed fruit-topped butter cake that we know today. Without access to an oven, Americans “baked” leavened foods such as cornbread, biscuits, and cakes in a cast iron skillet over fire. Upside-down cakes containing chopped apples and cherries evolved from these cast-iron creations and were popular in the early 20th century. In 1925, Dole held a recipe contest to promote their new canned pineapple product. After receiving thousands of recipes for upside-down cake with pineapples, Dole knew they had found a new American comfort classic. The winning recipe made the 1926 cookbook, Hawaiian Pineapple As 100 Good Cooks Serve It and starred in many of Dole's advertisements.
