Alton Brown Thinks We're Cooking Pasta Completely Wrong
So, we're having pasta for dinner. You know the drill. Fill the pot with water and put it on the stovetop. Turn the stove on. Wait. And then wait some more. Decide to tend to your herb garden while you're waiting. Hear the sizzle of boiling water cascading over the side of your pot onto the stove. Whoops!
But what if there were a better, more efficient way? Alton Brown to the rescue. The Cooking Channel star of Good Eats: Reloaded offers carb-lovers abrilliant method for cooking pasta: Add your dry pasta to salted cold water before you bring the pot to a boil.
No, it's not Everything Is a Lie Day. As The Kitchn's Elizabeth Sherman explains, "Brown actually adds his dry pasta to salted cold water (just enough to fully submerge the noodles, about 1 1/2 inches deep), and then brings the whole thing (water and pasta) to a boil." Sherman unearthed the method from a Reddit thread where one fan claimed, "I'm an AB/Good Eats devotee and always cooked pasta his way (lots of heavily salted water). Since his Reloaded method was introduced, I've never gone back. It saves time, energy, and water."
