This straight-forward tomato side salad lets sweet seasonal heirloom tomatoes shine in all their colorful glory. In-season tomatoes are crucial. If you can’t find heirlooms, cherry tomatoes would also work well. The mustardy vinaigrette is the perfect punchy dressing to contrast the natural sweetness of the basil and tomatoes. If you have time, gently toss the tomatoes with the dressing, and let the flavors meld for about 20 minutes. You can serve this salad as a side to any protein, but it’s particularly lovely with grilled steak or seafood. Ingredients 2 Tbsp. apple cider vinegar 2 tsp. Dijon mustard 1 tsp. kosher salt 1/2 tsp. black pepper 1/2 tsp. honey 2 Tbsp. extra-virgin olive oil 1 medium (1 oz.) shallot, finely chopped (2 Tbsp.) 4 small (2 lb. total) heirloom tomatoes, cut into wedges 2 tbsp fresh basil 2 Tbsp. thinly sliced fresh basil Directions Whisk together cider vinegar, Dijon mustard, salt, pepper, and honey in a small bowl.
