It uses a few simple ingredients like soy sauce, garlic, brown sugar, and honey, and it takes one bowl and maybe three minutes to whip together.

  • Water: A little water makes the marinade go further to cover all the chicken.

How To Make Grilled Chicken Marinade

Most marinades come together in minutes without any cooking or special techniques. Here's a brief outline of the process; the full recipe is further below:

  • Step 1. Combine ingredients: In a bowl, combine the marinade ingredients, and whisk until incorporated.
  • Step 2. Marinate chicken: Place chicken and marinade in a large bowl or ziplock bag together, and make sure the meat is covered.

After at least two hours (or up to 24 hours), cook the chicken any way you prefer. Grilling is especially great with this marinade because the honey and brown sugar help develop caramelized lines that increase the flavor.

How Long Should Chicken Sit in a Marinade?

To really get the flavors of this grilled chicken marinade infused into the meat, you’re going to want to let the chicken soak for at least two hours, but up to 24 hours. You can freeze chicken that is in a marinade. In fact, this marinade freezes beautifully. Just place the prepared marinade in a freezer-safe ziplock bag with the chicken, and squeeze as much air out as possible. Lay the chicken flat to freeze. Make sure to mark the bag with the contents and date.

You'll have an easy, ready-to-go meal for the next time you don’t feel like having to plan ahead. Thaw the chicken in the fridge overnight, and cook as planned.

What To Pair With This Grilled Chicken Marinade

The beauty of this grilled chicken marinade is that it works well with everything. Add some rice or noodles and veggies for a chicken stir-fry night, or make a baked potato, and top it with this saucy chicken.

Ingredients

  • 1/3 cup soy sauce

  • 1/4 cup honey

  • 1/4 cup rice vinegar or white vinegar

  • 2 Tbsp. tap water

  • 1 tsp. light brown sugar

  • 1/2 tsp. sesame oil

  • 2 cloves garlic, minced

  • 1 tsp. minced fresh ginger

  • 1/4 - 1/2 tsp. red pepper flakes (optional)

  • 1 - 1 1/2 lb. boneless skinless chicken breasts or thighs

Directions

  1. Combine marinade ingredients:

    In a small bowl, whisk together all ingredients until well combined.

  2. Add chicken:

    Add chicken to a gallon-size zip-top plastic bag. Pour marinade into the bag and massage into chicken. Allow to sit in the refrigerator for 2 to 24 hours.

  3. Prepare the grill:

    When ready to cook, preheat one side of a gas grill to high (450°F to 500°F) and heat the other side to medium-low (300°F to 350°F).

  4. Grill the chicken:

    Place the chicken on the high heat side of the grill, close the lid, and grill until it’s browned on the bottom, about 2-3 minutes. Flip the chicken over and move it to the cooler side of the grill. Close the grill lid and cook until a thermometer inserted into the thickest part of the chicken reaches 160°F.
