Hot Chicken-and-Waffle Sandwiches

Recipe: Hot Chicken-and-Waffle Sandwiches

We did a taste test and loved the just-fried tenders from the Publix grocery store deli. If you don't have time to whip up homemade waffles, head to your grocer's freezer section. We like Van's Belgian Homestyle Waffles.

Breakfast Enchiladas

Recipe: Breakfast Enchiladas

Who says enchiladas are just for dinner? You and your entire family won't be able to resist this decadent breakfast casserole. It’s flavored with bold Mexican flavors, like fresh red bell peppers, salsa verde, fresh cilantro, and chopped avocado. The cheese sauce comes together with only six ingredients, and helps take this crowd-pleasing casserole to the next level in flavor and fill. Remove eggs from stovetop while they're still a bit wet; they'll finish cooking in the oven. To make this a day ahead, go through Step 2; cover and chill the casserole. Let stand at room temperature about 20 minutes before baking.

These are our Food staff's favorite fluffy buttermilk flapjacks, and they are sure to become your family’s favorite too. We named them after their creator, Test Kitchen Pro Pam Lolley. Tomato-Herb Frittata

Recipe: Tomato-Herb Frittata

The secret to this recipe is an ovenproof nonstick pan, which allows the eggs to cook properly, keeps them from sticking, and simplifies cleanup.

Sunny Breakfast Skillet

Recipe: Sunny Breakfast Skillet

Homemade shredded potatoes, butter, bell peppers, onion, and garlic – it’s a complete meal in one skillet. Sunny-side up eggs top off the meal. Pop some whole wheat bread or English muffins in the toaster, and this one-dish breakfast is served. We bet that your family will like it so much that they’ll ask request it for dinner, too. Pressed for time? Instead of baking and shredding the potatoes yourself, use storebought frozen hash browns. Looking to take it to the next level? Add a sprinkle of sausage to the hash browns, and top the eggs with sharp cheddar or mozzarella cheese for a perfect Easter breakfast.

Recipe: Pecan Pancakes

This breakfast favorite is quick and easy, not to mention super tasty. We prefer the hearty thickness of these pancakes. If you like yours thinner, add up to 2/3 cup additional milk to batter.

Hearty ground oats lend a nutty flavor to these fluffy homemade waffles. For a fun presentation, allow your family to choose their own toppings buffet-style. We like syrup, jams, fruits, cinnamon and powdered sugar, toasted nuts, and, if you want splurge, whipped cream and chocolate chips.
