Hi, I'm Norman from the Southern Living test kitchens and barbecue pork quesidillas are whats for supper. In this dish, the flavors of savory barbecued pork and warm Mexican cheeses combine to make a Tex Mex supper that is an instant hit at the table. Start with barbecue pork that you picked up from your favorite barbecue joint. This is a short cut that will save you a ton of time in the kitchen. To the pork, add some barbecue sauce, and my favorite type has the right balance of sweetness, tanginess, and spiciness. Next, add some chopped cilantro and some minced green onions. And stir this together well as this is gonna be the filling for your quesadillas. To assemble the quesadillas, I'll star with small flour tortillas. I like to warm them up in the microwave for a few seconds to make them easier to work with. I just spoon the filling into the tortillas. And sprinkle them with a little bit of Mexican four cheese blend. Just fold them in half, and spread both sides with a little bit of softened butter. This will help them brown up real nice and crisp. Cook the quesadillas in a large skillet over medium heat for about two minutes on each side or until the tortillas are browned and the cheese is nice and melted. Now doesn't this look amazing?
