Late summer summons the best kind of gatherings; they're lazy and laid back; yet the energy is filled with momentum for the fall season and the year ahead. On the flip side, our neighborhood supper club has taken a more formal approach for the remainder of 2018. We've switched to Wednesdays to make the most of our hump day!

As we rotate who plays host, I've been consistently asked to bring a special dish to our eight-person dinner table. As if bringing a dish to another's home isn't enough pressure, fear of overcooking or ruining your end product is a terrible feeling that I hope we all avoid! I have found that a slow-roasted salmon is a good choice because the simple cooking method yields a satisfying main course, it can be easily transferred to my friend's house down the street, and it can be served at any temperature.

I believe the following preparation is truly the best way to cook salmon. Your already-fatty fish gets to luxuriously roast in even more fat (extra virgin olive oil) alongside herbs and the citrus of your choice, making the filet nearly impossible to overcook. As does a very low oven temperature—300˚F.

The final product looks fantastic, takes minimal time—and did I mention it's temperature-friendly? I have served this recipe warm, chilled, and at room temperature. All are marvelous.

The cherry on top is a layer of fresh figs, which add a pretty yet organic look and a touch of sweetness to the flaky fish. Coarse sea salt brings enhances the flavor of the fruit, in my opinion; so don't skimp on the finishing salt! A drizzle of balsamic vinegar adds additional sweetness to the table, if you're in the mood. Otherwise, a squeeze of fresh lime juice will naturally enhance your finished filet.
