Classic roast chicken is a great foolproof meal to feed a hungry crowd for dinner. It is also good to cook ahead and use on salads or sandwiches for lunch during the week. Roasting chicken is a great weeknight technique because it is hands-free and hard to mess up. If you have a lot of mouths to feed, or enjoy leftovers, you can even roast two chickens at once. When you are short on time, roasting separate pieces instead of a whole chicken will cut down the cooking time and allow dinner to be on the table sooner. Cooking the side dishes and chicken in the same pan also cuts down on prep time and allows your whole meal to be ready in a flash.
