Let's talk a little bit about meat moisture and how to make sure our meat is as moist as it can be. The reason why most meat dries out is because people overcook it. So, you want to make sure you pull the meat off at the right finishing temperatures. The recipes in the book have a finishing temperature of the meat for the most part. So make sure you've got yourself a good thermometer, and use it in the very thickest part of the meat. And pull that meat off when it's time.
