Combine salt and pepper. Sprinkle chicken cavity with salt mixture.

Rub oil over skin. Spinkle with salt mixture.

Place chickens, breast sides up, on a lightly greased wire rack in a lightly greased roasting pan.

Step 4: Cook chicken

Bake at 375° for 1 1/2 hours or until a meat thermometer inserted into thigh registers 165°. Let stand 10 minutes before slicing. (Letting the chicken stand allows the juices to absorb into the meat. Cutting it too quickly causes the juices to escape and leave the chicken dry.)
