Learn how to pound chicken cutlets with this tip from Test Kitchen Director Robby Melvin.
[MUSIC] The tools you'll need to pound your way to the perfect cutlet. Are a good meat mallet. A piece of parchment to cover your surface. Two sheets of plastic wrap. And your protein of choice. We have some chicken cutlets here. Gonna place one sheet down, the cutlet in the center, and place the other sheet on top. You're gonna start pounding in the middle and as your protein spreads, you simply [NOISE] gonna pound around to sort of even up the edges and you wanna pound to about a quarter inch in thickness. Once you're at this point, you can remove the plastic, and go straight into your breading of choice. Or, you can fold it over and you can pop this into the fridge until you're ready to use it.
