Step 1: Remove the Stem
Use a paring knife to carefully cut the stem out of the tomato

Step 2: Plunge Into Hot Then Cold Water
Plunge the tomato into boiling water for 15 seconds if ripe, 30 seconds if underripe. Drain the tomato in a colander and place immediately in an ice bath.

Step 3: Peel Off the Skin
Peel back the skin in strips by pinching it between your thumb and a paring knife.

Step 4: Squeeze and Remove Seeds
Cut tomato in half crosswise. Hold half in your hand and gently squeeze, removing the seeds with your fingers or a spoon.
