A creative and fun alternative to pasta, is to make zuchini linguini. First thing you want to do [NOISE] is remove the ends of your zucchini. Using your Japanese mandolin, make nice long, thin ribbons. Then you want to stack your ribbons, and then make nice thin lengthwise cuts. [NOISE] And there you have zucchini linguine, perfect to blanch in lightly salted water, saute in a little butter, and overall delicious.
