Free up your Saturday afternoon – you're going to want to try this 'sushi'. The slightly sweetened rice is made with coconut milk and honey, and then topped with a slice of fresh fruit. Kids will love helping assemble the healthy snack and picking up their Fruit Sushi with chopsticks.Fruit Sushi1 roll berry fruit tape, cut into six smaller strips1 cup uncooked jasmine white rice¼ cup granulated sugar¼ cup coconut milk½ teaspoon almond extract2 tablespoons sweetened shredded coconut1 teaspoon honey, plus additional for adhering rice¼ teaspoon saltKiwi, sliced verticallyRed skinned peach, skin on, sliced vertically into stripsStrawberry, thinly slicedMaple syrup, for dippingBring 1 cup water to a boil; add rice, reduce heat to simmer. Simmer rice, covered, until most of the water is absorbed. Take off heat and leave covered for 15 minutes. Remove cover and add sugar, coconut milk, almond extract, coconut, honey, and salt. Stir, and cover for 20 minutes more. Place rice in fridge for at least 30 additional minutes to set.
