From February through June, we're thrilled to be twisting, snapping, peeling, and pinching as many crawfish as we can. They're juicy, they're delicious, and they encourage plenty of neighborly camaraderie. Crawfish boils are a Southern staple (especially in Louisiana and the Mississippi Delta), and we want to arm you with the knowledge of how to make the most of your crawfish. Be sure to boil with plenty of corn and potatoes! And, if you're brave enough – try sucking the heads for more flavor.
