I had forgotten the first time and noticed (the second time) when I did move my thumb around the edge, the souffle rose much higher. "I give this recipe 5 stars because it is incredibly easy to make and tastes delicious. This works well for a quick dessert for company because it's fancier than just chocolate chip cookies and would go very well with coffee. I didn't put the second layer of chocolate on the shortbread since I ran out of chips, but I don't think it needed it. Be careful of overcooking this one -- it's moist and delicious if you take it out when LIGHTLY brown. Enjoy!"
