You just want to make mashed potatoes the way you normally would. You want to mash your potatoes and then season them with salt, pepper, butter, stock, whatever you normally put in them. And then for every three pounds of potatoes that you used You're gonna add two beaten egg yolks. And egg yolks are gonna give the potatoes structure for when we pipe them out, which you'll see in a minute. So I'm just gonna stir the egg yolks in. So next you're gonna take a piping bag and fill it with the mashed potato mixture. And after you have it full, you're gonna snip off the end and then pipe it onto a sheet tray lined with parchment paper. Then once you have them all piped out, they're nice little individual servings, you're gonna brush the top with some egg wash, you can use egg yolks or egg whites, and now we're gonna take these, and basically we're gonna twice-bake them. We're gonna bake them in the oven until they're nice and golden browned on the top. And the best part about these potatoes is that your kind of getting two potatoes in one.
