Lent season is in full swing, lasting until April 13. During this time, observers abstain from eating meat on Fridays. We gathered some of our favorite vegetarian meals, along with a few fish main dishes, for families who eat seafood as well. Even if you're not observing Lent, we think you'll love these fresh spring recipes, which work well on any busy weeknight.

Spring Pea Orzo (pictured)

Slivered almonds add protein to this tasty vegetarian pasta. Add the dressing to the orzo when the pasta is still warm so it soaks up all of the delicious flavor.

Fettuccine Alfredo with Asparagus

Indulge in a creamy white sauce that doesn't come from a jar. This homemade Alfredo sauce takes minutes to whip up and pairs beautifully with in-season asparagus.

Strawberry Salad with Warm Goat Cheese Croutons

Now that Florida strawberries are hitting grocery stores, make this delightful (and beautiful) main dish salad topped with crispy goat cheese croutons.

Salmon Croquettes with Dill Sauce

For a quick and healthy weeknight dinner, you can't beat these tender salmon cakes. Instead of the traditional deep fry, they are pan-fried in a little olive oil for a lighter flavor—and less mess.

Vegetable Tortellini Soup

Let this homey slow cooker soup simmer while you're at work and come home to a comforting bowl of tender vegetables and tortellini in a rich broth.

Spinach-and-Herb Pastatta

Never heard of a pastatta? That's because we invented it! The whole family will love this comforting, hearty casserole that's a cross between a baked pasta and a frittata.

Asparagus, Spring Onion, and Feta Quiche

Breakfast for dinner is always a nice change of pace, and this cheesy vegetable quiche will satisfy the heartiest appetites.

Almond-Crusted Tilapia

Almonds make a flavorful coating for mild tilapia filets. Serve with your favorite green salad, or with a side of grits or couscous.

Fresh Tomato and Asparagus Gnocchi

Pasta is a go-to dish at Lent, but potato gnocchi are just as delicious and versatile. Try this version, topped with fresh tomatoes and asparagus. If you don't have time to make gnocchi from scratch, pick up a package of refrigerated gnocchi at the supermarket.
