Food and Recipes Desserts Pies Texas Trash Pie Is The Delicious Treat with the Dirty Name Something that sounds so wrong, tastes so good. There's at least one thing that makes the long drive worthwhile, though—Texas Trash Pie at Royers Round Top Café. The legendary dessert, which Huffington Post reminded us about, is the result of a serious cupboard cleaning. Its classic recipe involves adding bits and bobs of chocolate chips, pretzels, shredded coconut, graham crackers, and caramel, blended together with sweetened condensed milk and baked in a pie shell until it emerges from the oven looking nothing like its namesake trash. Royers Round Top Café got into the pie-making business in 1987, when Bud "the Pieman" Royer and his wife, Karen, and their four children moved to Round Top, setting up shop in an abandoned café. They had no culinary training or kitchen experience, according to their website, but that didn't stop them from jumping in to the pie-making action. It's not clear whether the pie-making geniuses at Royers invented Texas Trash Pie, but they certainly perfected it, serving up slices with a scoop of Texas's own Blue Bell ice cream, for one of the best slices of pie in the South. Now their menu features 13 different pie options, including strawberry rhubarb pecan, buttermilk, and "junkberry". Whichever flavor you choose, the owners suggest you order it as an appetizer, so you don't have to save for it later. Instead simply order a pie on Goldbely and it will show up at your doorstep in a few days. You'll have to provide your own Blue Bell ice cream, though, or start driving to Round Top.
