Yes, they are both real milk. The texture of both evaporated and sweetened condensed milk is different than your favorite brand of 2% because 60% of the water is — you guessed it — evaporated. Evaporated and sweetened condensed milk are made that same way, but one of them gets a little something extra before going in the can. The only difference is the addition of sugar! Sweetened condensed milk takes a dose of sugar to bring out the sweetness in all of your favorite baked goods. So, take your recipe with you to the store and be sure you buy the correct kind!
