Stacey Little, the Alabama food blogger behind Southern Bite, shares a cheesy, easy dish that the whole family will love.

Though we're already a month into it, there's still something shiny and new about 2018. The hustle and bustle of the holidays is over and we've returned to life as normal. While I enjoy the time with family and friends the holidays afford us, I also love the return to everyday life. And I enjoy returning to the simple things. For me, one of those things is family supper.

Ever since Heather and I got married, we've made an effort to sit down to supper together as many nights a week as we can. I grew up with my mom cooking supper nearly every single night, so it’s important to me. Having our son only amplified the desire to make time each day to share an evening meal. It's a time to connect. It’s time to put the cell phones away and turn the televisions off. We use the opportunity to learn about each others’ day and to hear about what Jack learned in school—even if we’re met with his usual answer: “nothing.” It’s a time to turn the world off and just be a family. It’s probably my favorite time of the day.

Sitting down for supper doesn’t mean you have to spend hours in the kitchen, though. Home-cooked meals don’t have to be elaborate to be delicious. I’d even venture to say that what you have on the table is not nearly as important as who’s around it. Wouldn’t you agree?

This Chili Mac is one of those dishes that makes getting supper on the table super easy. It's the nostalgic, stick-to-your-ribs kind of meal that just makes you feel all warm inside. This version is quick, easy, and maybe a little lighter than some more traditional recipes, but it certainly isn't short on flavor.

This recipe makes a pot full. Which is great because this stuff is even better as leftovers.
