Recipe: Crunchy Pecan Pie Bites

Pecan pie is a sweet Southern favorite, and there’s always a place for one on our holiday dessert tables. With this Crunchy Pecan Pie Bites recipe, however, you get all the goodness of a homemade pecan pie in a bite-size treat. (So, no judgments if you want to eat a few extras!) This recipe has a large yield, so it’s ideal to make for a crowd, but if you have leftovers (which is highly unlikely), these mini desserts save well in the freezer. Whether served on festive trays at a holiday cocktail party or in a new place on the Thanksgiving dessert table, these Crunchy Pecan Pie Bites will be a staple in our kitchen all season long.

One aspect that makes this recipe so easy is that it calls for store-bought phyllo dough cups. These little dough cups are portable for a party, and they hold well in the oven. Start this recipe off by stirring corn syrup and sugar together in a large bowl. These two ingredients will make the “glue” for our Crunchy Pecan Pie Bites. Next comes the most important ingredient – Southern-grown pecans. We toasted our nutty pecans at 350 degrees until slightly browned, and they’re chopped up a little bit to fit in the phyllo cups. After the pecans, add eggs, melted butter, a pinch of salt, and vanilla to the bowl, and stir it all together. Next, fill the phyllo cups with a heaping teaspoon of the pecan mixture. Be sure not to overfill the cups because as the bites bake, they’ll rise and bubble a bit. These sweet pecan pie bites will bake at 350˚ for 25 to 30 minutes, or until the top has a glazed, browned finish.
