From baked ham, deviled eggs, sweet potato casserole, collard greens, and more, there’s no denying that we do a lot of cooking on Easter. So when it comes to dessert, why not try a no-bake recipe? These Butterscotch Bird Nest Cookies are so easy to make. Butterscotch and peanut butter are melted together in the microwave, then folded into crunchy chow mein noodles. The cookies are spooned out onto parchment paper and topped with your choice of Cadbury Mini Eggs or Robin Eggs. These cookies look just like little pastel birds nests, and the butterscotch and peanut butter, combined with the salty noodles and chocolate eggs, make for an irresistibly delicious confection. Ingredients 1 (11 oz.) bag butterscotch chips 1 (5 oz.) container chow mein noodles 1 Tbsp. peanut butter Chocolate candy eggs (such as Cadbury or Whoppers) Directions Line a baking sheet with parchment paper and gather your ingredients. Jessica Furniss Combine the butterscotch chips and peanut butter together in a medium microwave-safe container. Microwave on HIGH in 10-second increments, stirring every 10 seconds, until smooth. Do not overheat the butterscotch chips or the mixture will become hard and unworkable. To a medium bowl, add the chow mein noodles, then pour the melted butterscotch peanut butter mixture over top. Stir gently until all noodles are coated. Be careful not to break too many of the noodles. Jessica Furniss Use two spoons to scoop up a clump of the coated noodles and form them into a nest shape on the prepared pan. Jessica Furniss Next, use the round side of one of the spoons to press gently to form a bit of a dip in the center. Immediately add three candy eggs to the center to make your bird’s nests. Jessica Furniss Chill for about 15 minutes to harden before serving. Store the cookies in an airtight container on the counter or in the fridge for up to a week.
