The result is a sweet bread so moist it almost falls apart in your hands. The best part: You don’t need to plan ahead and wait for your bananas to turn brown (though overripe bananas will certainly work). We’ve formulated our recipe to provide maximum banana flavor from just-ripe bananas, plus mouthwatering bursts of blueberry from fresh or frozen berries. A handful of walnuts adds some crunch, though it’s just as yummy without them. Serve up this blueberry banana bread at your next brunch get-together. Caitlin Bensel; Food Stylist: Torie Cox Ingredients 1 3/4 cups all-purpose flour, plus 1 Tbsp. to toss with blueberries 1 tsp. baking soda 1/2 tsp. kosher salt 1/2 cup vegetable oil 1 cup granulated sugar 3 ripe bananas, peeled and mashed 2 large eggs 2 tsp. vanilla extract 1 1/2 cups fresh or frozen blueberries 1/2 cup chopped walnuts (optional) Directions Gather ingredients: Preheat the oven to 350°F. Grease a 9- x 5-inch loaf pan with cooking spray. Gather your ingredients. Caitlin Bensel; Food Stylist: Torie Cox Combine oil and sugar: In a large bowl, beat oil and sugar with an electric mixer on medium speed until combined. Caitlin Bensel; Food Stylist: Torie Cox Add bananas, eggs and vanilla and beat on medium until combined. Add flour mixture and beat on low speed until just combined. Caitlin Bensel; Food Stylist: Torie Cox Add blueberries: Gently toss the blueberries with the remaining 1 Tbsp. flour. Fold the blueberries and walnuts (if using) into the batter. Caitlin Bensel; Food Stylist: Torie Cox Bake 65-75 minutes, or until a toothpick inserted in the center comes out clean.
