No summer party is complete without a hand-held, festive dessert like these colorful No-Bake Red Velvet Truffles. Made with the flavors of rich red velvet cake that all Southerners love, these chewy cake balls are a breeze to pull together. Use premade red velvet cake mix, candy melts, and sprinkles to make these cake batter bites in just a few minutes. Dunk the formed cake balls into white chocolate or candy melt, drizzle with blue-dyed chocolate, and add red nonpareils for a vibrant Fourth of July presentation. You won't be able to eat just one of these delectable truffles!
½ cup unsalted butter, softened
½ cup sugar
1 ½ cups all-purpose flour
1 cup red velvet cake mix
1/8 teaspoon salt
1 teaspoon vanilla extract
3 to 4 tablespoons milk
1 (12 oz.) pkg. bright white vanilla candy melts
4 oz. Royal Blue vanilla candy melts
- Beat butter and sugar in a large bowl with an electric mixer until combined. Add flour, cake mix, salt and vanilla, mixing until combined. Add milk, 1 tablespoon at a time until a dough consistency is formed.
- Roll dough into 1-inch balls and place on parchment or wax paper on a baking sheet. Chill truffle dough for at least 15 minutes or until firm.
- Melt white candy melts according to package directions. Using a fork or dipping tool dip truffle balls into melted candy, rolling to coat. Place on wax paper to dry (about 15 minutes).
- Melt blue candy melts according to package directions and place in a ziptop bag or small piping bag. Cut the tip off the bag. Drizzle blue candy melts over the truffles. Sprinkle the tops with a small amount of red nonpareils, if desired. Chill truffles until ready to serve.
