For the Month of Simple Suppers Challenge, I made the BBQ Chicken Loaded Baked Potatoes. For this recipe, I substituted chicken for pork because it’s what I had on hand. One thing I liked about this recipe is that everyone can choose their own toppings based on their personal preferences. A picky eater can add just meat to their potato, while a veggie lover can pile on all of the toppings. In addition to the toppings listed in the recipe, I also loaded the potatoes with salsa and sautéed mushrooms.

Putting the potatoes in the oven first thing was key, as the time it took for them to cook was just long enough to prepare all of the toppings. This meal is quite flexible and can be catered to whatever you have on hand in your refrigerator and pantry. I’d definitely consider using this recipe in the future for a potluck-style dinner party. It’s an easy idea: I’d provide the meat and potatoes and ask friends to bring different toppings and sauces of their choice.
